Arare is actually a Japanese term for plain rice crackers that are dry roasted. Arare is made up of glutinous rice (sticky rice). Patience is a requirement in the procution of arare. The process takes an average of seven days. Moisture control is a vital necessity in production, which consists of various stages consist of cooling, ageing, drying, and roasting. Once this is done the rice is milled into powder and steamed into a sticky dough. The process ends with forming the dough into the predefined shapes, dipped into a soy sauce mix, and finally dried and packaged.
